COOKIE CRUST:

1 c. flour
3 tbsp. sugar
1 tsp. lemon rind
1/2 tsp. vanilla
1 egg yolk
1/4 c. butter, melted

FILLING:

3 (8 oz.) pkg. cream cheese, room temperature
4 lg. eggs
1 tsp. lemon rind
1 tsp. vanilla
1 c. sugar

Mix cookie crust dry ingredients with fingers. Make a well in the center. Add egg yolk and melted butter. Pat mixture 1 1/2 inches up the side of a greased springform pan. Beat cream cheese well, add remaining filling ingredients, beat well. Pour into cookie crust. Bake at 400 degrees for 20 minutes, then 350 degrees for 20 minutes. Make sure you use the lowest rack position in the oven.
