SWEET POTATO CASSEROLE 
1 (17 oz.) can sweet potatoes
1/4 c. brown sugar
2 tbsp. melted butter
1/2 tsp. salt
1/2 tsp. nutmeg
1 (8 oz.) can crushed pineapple, undrained

TOPPING:

1/4 c. pecans
1 tbsp. brown sugar
2 tbsp. melted butter

In large bowl with electric mixer at medium speed, beat sweet potatoes, brown sugar, butter, salt and nutmeg, until smooth. Fold in crushed pineapple. Put into casserole. Combine pecans, brown sugar, butter. Sprinkle over top of potato mixture. Bake, covered at 350 degrees for about 45 minutes. Makes 6 servings.
