RHUBARB UPSIDE DOWN CAKE | |
2 tbsp. butter 1/2 c. sugar 1/4 c. brown sugar 2 c. rhubarb, cut in 1/2" pieces 1/3 c. shortening 1/2 c. sugar 1 egg 1/2 tsp. vanilla 1/2 c. milk 1/4 tsp. salt 1 c. flour 1 1/2 tsp. baking powder Melt butter in an 8"x8"x2" baking dish. Stir in 1/2 cup sugar, brown sugar and rhubarb. Spread evenly over bottom of dish. Mix shortening, 1/2 cup sugar, egg and vanilla; beat well. Add dry ingredients and milk. Spread creamed mixture over rhubarb. Bake at 350 degrees for 50 to 55 minutes. Cool 10 minutes and invert onto serving plate. Serve warm with whipped cream. |
