RHUBARB UPSIDE DOWN CAKE 
3 c. rhubarb
10 marshmallows, halved
3/4 c. sugar
1/2 c. shortening
1 c. sugar
2 beaten eggs
1 3/4 c. flour
1/4 tsp. salt
3 tsp. baking powder
1/2 c. milk

Place rhubarb in 10 inch skillet with marshmallows and 3/4 cup sugar. Mix together remaining ingredients to make batter and pour over rhubarb.

Bake in moderate oven 1 hour. Cool 5 minutes, loosen edge from pan with knife, insert serving plate over skillet and turn upside down. Remove skillet. (Good served with whipped cream.) Red rhubarb placed in pattern makes a pretty cake.
