CRANBERRY ORANGE BREAD 
2 c. all purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1 egg
1/2 c. orange juice
Grated rind of orange
2 tbsp. melted butter
2 tbsp. hot water
1 c. raw whole cranberries
1 c. coarsely chopped walnuts

Combine flour, baking powder, soda, salt, and sugar in large bowl. Set aside. Mix beaten egg with orange rind, butter and hot water. Fold flour mixture into egg mixture until blended. Do not beat. Gently fold in cranberries and walnuts. Spoon into greased 9 x 5 x 3 loaf pan or smaller pans. Bake at 325 degrees for 60 minutes, test center with toothpick. Cool on rack 15 minutes. Yields 1 loaf.
