VEGGIE PATTY SPAGHETTI | |
2 tbsp. oil 1 clove garlic, minced 1 1/2 c. minced onions 1/2 c. chopped green pepper 1/2 c. sliced mushrooms 8 oz. veggie patty 4 c. chopped tomatoes 1 bay leaf 1/4 tsp. oregano 1 tsp. salt 2 tbsp. butter Heat a skillet and coat with oil. Add garlic and onion, and saute for 5 minutes. Add green pepper and mushrooms and saute for 2 minutes more. Add veggie patty mixture and saute until browned lightly. Add the next 4 ingredients and simmer, uncovered, stirring every 3 minutes, for 20 minutes. When the sauce has become very thick, remove bay leaf. Serve over spaghetti noodles. Top with Parmesan cheese. Serves 4. |
