EGG CUSTARD | |
2 refrigerated pie shells 9 lg. eggs 1 1/2 c. sugar 1/4 c. Pet milk 2 1/2 c. plain milk 2 tsp. vanilla Place pie shells in large pans and sprinkle with flour (do not prick). Place in 300 degree oven and heat but do not brown. Remove and add 3 pats butter to each shell. Set aside. Place eggs in mixer (reserve 4 whites for topping). Add sugar while continuing to beat. Add Pet milk, plain milk and vanilla. Beat until mixture foams good. Pour into shells and cook on 400 degrees for 13 minutes. Then turn oven to 300 degrees for 23 minutes until firm on outside and center shakes like jelly. Remove from oven. Place egg white topping and brown in 350 degree oven. Remove and cool. EGG WHITE TOPPING: 4 egg whites 4 tbsp. sugar 1/8 tsp. cream of tartar Beat ingredients until stiff. Spread on top of pies and brown. |
