EASY OVEN BEEF STEW 
2 lb. stew, fat trimmed (bite size)
2 c. diced onion
2 c. potatoes, chunked
2 c. carrots, chunked
2 c. celery, chunked
Mushrooms (optional)
2 tsp. salt
1/2 tsp. pepper
5 tbsp. dry tapioca
1 tsp. sugar
3 c. (24 oz. size) V-8 juice

In covered or Dutch oven, layer ingredients above, starting with beef consecutively down to juice. Bake at 250 to 300 degrees for 5 hours.
