COUNTRY FRIED CHICKEN 
1 fryer chicken
Flour
Milk
Salt
Oil for frying

Cut up and wash chicken; let soak in salted ice water for 20-30 minutes. Roll chicken parts in flour. Dip each piece in rich milk. Sprinkle salt and pepper and roll in flour again.

Drop into hot oil and brown on one side carefully. Turn uncooked side down; lower heat. Cover and cook until that side is brown. Cooking time all together should be about 30-35 minutes. Don't turn chicken over and over; that makes the crisp crust drop off.
