CORNBREAD MUFFINS 
3/4 c. corn meal
1 c. flour
1/3 c. sugar
1 c. milk
3 tsp. baking powder
3/4 tsp. salt
1 egg
2 tbsp. corn oil

Sift corn meal, flour, sugar, baking powder and salt together. Beat egg lightly and add oil and milk. Add dry ingredients to liquid and stir well. Pour batter into muffin pans, approximately 2/3 full.

Bake in a 400°F oven for about 20 minutes.
