BEST BLUEBERRY MUFFINS 
1 1/2 c. plain flour
1/2 c. sugar
1 tbsp. baking powder
1 egg, beaten
1/2 c. milk
1/4 c. oil

Preheat oven to 400 degrees. Mix dry ingredients together. Set aside. Mix egg, milk and oil together. Add liquids to dry mixture - stir only until moistened. Fold in 1 cup fresh blueberries (or frozen). Spoon into greased and floured muffin cups until 2/3 full. Bake for 20-25 minutes.

Variation: Instead of blueberries, add 1/2 teaspoon cinnamon to dry ingredients then fold in 1 cup chopped apples. Makes 1 dozen.
