BEST BLUEBERRY MUFFINS 
2 1/2 c. flour
3/4 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 eggs
1 c. buttermilk
1 tsp. vanilla extract
1/2 c. butter
1 1/2 c. blueberries
1 tsp. grated lemon peel

Sift together first 4 ingredients. Cut in shortening with two knives used scissor fashion or a pastry blender. In a small bowl with a fork, beat eggs, buttermilk and vanilla extract. Stir egg mixture into flour mixture just until moist. Fill greased muffin tins 2/3 full and sprinkle with cinnamon-sugar. Bake in a preheated 400 degree oven. Makes 12 muffins.
