BLUEBERRY BANANA MUFFINS | |
1 c. whole wheat flour 1 c. all-purpose flour 1 tsp. baking soda 2 tsp. baking powder 1/2 tsp. cinnamon 1/2 c. rolled oats 1/4 c. oil 4 tbsp. sugar 2 egg whites 1 tbsp. lemon juice 1/2 c. 100% pure unsweetened orange juice 1 c. frozen blueberries 2 whole bananas, mashed Combine all the ingredients except the berries and bananas until just blended. Gently add the berries and bananas by hand with a wooden spoon. Spoon into prepared muffin tins. Bake at 350 degrees for 20 minutes. 12 muffins. Each muffin: 171 calories, 0 mg. cholesterol, 130 mg. sodium, 170 mg. potassium, 5.2 gm. fat. |
