MARINARA SAUCE 
1/4 c. olive oil
1 med. onion, chopped
2 cloves garlic, minced
2 lbs. plum tomatoes, chopped, peeled & seeded or 28 oz. can chopped tomatoes
1 tsp. oregano (dry)
1 tbsp. basil
1/2 tsp. salt
1/4 tsp. black pepper

In medium saucepan heat oil over low heat. Add onions and garlic. Saute until soft (5 minutes). Stir in tomatoes, herbs and salt and pepper. Bring to boil, reduce to low heat. Cook, covered for 40 minutes. Yield: 3 cups.
