SOUTHWEST SALAD 
1/2 tsp. grated orange rind
1/4 c. fresh squeezed orange juice
1/2 c. vegetable oil
2 tbsp. sugar
3 tbsp. red wine vinegar
1 tbsp. lemon juice
1/4 tsp. salt

1 sm. cucumber, sliced thin 1 avocado, peeled and sliced crosswise 1 sm. red onion, sliced and separated into rings 1 can (11 oz.) mandarin oranges, drained or fresh orange sections

Combine dressing ingredients; mix well and set aside. Mix remaining ingredients and toss with dressing in medium bowl. Serves 6.
