WHOLE WHEAT CARROT CAKE 
1 c. sugar
1 c. packed brown sugar
1 c. vegetable oil
1 tsp. vanilla
4 eggs
1 1/2 c. whole wheat flour
1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. allspice
1 tsp. cinnamon
3 c. shredded carrots
1 c. chopped nuts

Preheat oven to 350 degrees. Gresae and flour 13"x9"x2" pan.

Stir together sugars, oil, vanilla and eggs in a large bowl well blended. Beat 1 minute, stir in flours, soda, baking powder, salt, allspice and cinnamon until well mixed. Stir in carrots and nuts. Bake 45 to 50 minutes. Cool well. Frost with cream cheese. Serves about 15.
