PANCAKES 
1 egg, beaten
1 c. buttermilk or skim milk with 1 tsp. vinegar
2 tbsp. vegetable oil
3/4 c. flour
1 tbsp. brown sugar or honey
1 tsp. baking powder
1 tsp. baking soda

In a medium bowl, beat egg, milk, and oil. Add flour, baking powder, and soda. Stir just until moistened. Batter will be slightly lumpy. Let sit 5 minutes before cooking on hot lightly oiled griddle. Serve hot with maple syrup or honey. Makes 10-12 pancakes.
