SUGARLESS CHEESE CAKE 
1 lb. cottage cheese
1 c. unsweetened crushed pineapple
1 env. unflavored gelatin
1 egg
5 packets Sweet 'n Low
1 tbsp. lemon juice
1 tbsp. vanilla
1 tsp. grated lemon peel

Soften gelatin in heated juice drained from pineapple. Place egg, Sweet 'n Low, vanilla, lemon juice and cottage cheese in blender and blend very well. Add gelatin with juice and blend well. Fold in crushed pineapple and pour into a 9 inch pie pan. Bake in 350 degrees oven for 30 minutes. Cool and refrigerate.
