CARAMEL APPLE SALAD 
1/2 c. sugar
8 oz. crushed pineapple
2 tbsp. cider vinegar
1 tsp. flour
1 egg
6 Granny Smith apples
1 c. dry roasted peanuts
10-12 oz. Cool Whip

Mix first 5 ingredients in saucepan. Bring to boil, stir until thickened. Cool (if in a hurry, cool in freezer). Cut apples into chunks with skin on. Add cooled pineapple mixture, peanuts and Cool Whip. Mix well and serve. Best if refrigerate for a while.

This is pretty much the same recipe I got from my aunt and have been making it for years. I always get compliments on this dish. The only difference between this and the recipe I have is that you add the pineapple juice from the can to the mix you cook on the stove and save some peanuts to sprinkle on top for garnish. This is such a delicious recipe!!
