CARAMEL APPLE SALAD 
1/2 c. sugar
3 tbsp. flour
1 egg, beaten
2 tbsp. cider vinegar
1 (8 oz.) crushed pineapple
4 apples, diced
8 oz. frozen whipped topping
1 c. peanuts, unsalted

Drain crushed pineapple, retaining juice. Combine sugar, flour, egg, vinegar and pineapple juice in small saucepan. Cook until thick, stirring occasionally. Cool. Combine diced apples, crushed pineapple and peanuts in bowl. Add cooled mixture and stir. Fold in whipped topping. Serves 8.

Very easy to make. Tastes great and has a wonderful caramel apple flavor. Granny Smith apples are a good choice of apple, but so are Fuji or any other sweet tasting apple. Don't dice the apples too small. Larger pieces are better, for it gives more of a crunchy texture to each bite.
