SAN-PAN CHICKEN SALAD 
1/2 to 3/4 c. cooked, skinned and deboned chicken, cut up
2-3 stalks celery, chopped
1 med. onion, chopped
Sm. can black olives
2 med. apples, chopped
4-5 nice lettuce leaves
1 can water chestnuts, drained and chopped
1 sm. bag chow mein noodles
2 tbsp. soy sauce
1 1/2 c. Miracle Whip
1/2 tsp. curry powder
1 tsp. course ground pepper

Put chicken, celery, onion, apples, and water chestnuts. Season with pepper and curry. Toss until covered. Place Miracle Whip and soy sauce in small mixing bowl and whisk with 1/2 teaspoon sugar. Stir into the chicken mixture. Refrigerate overnight. Just before serving add the chow mein noodles. Serve on a leaf of lettuce and garnish with black olive. Serves 4-5.
