UPPER CRUST CHICKEN 
10 slices white bread
2 c. chopped chicken
1 c. chopped celery
2 c. shredded Cheddar cheese
1 c. mayonnaise
2 eggs, slightly beaten
1/2 tsp. salt
1/2 tsp. poultry seasoning
1 1/2 c. milk

Trim crust from bread, reserving crust. Cut bread slices diagonally in quarters. Cut reserved bread crust into cubes. Combine bread cubes, chicken, celery and 1 3/4 cups cheese; mix well. Spoon into baking dish. Arrange bread quarters over chicken mixture.

Combine mayonnaise, eggs, seasonings; mix well. Gradually add milk and mix. Pour over bread. Sprinkle with remaining cheese. Cover and refrigerate overnight. Bake uncovered at 350 degrees for 30 minutes.
