FRIED PIES 
1 1/2 c. sifted all-purpose flour
3/4 tsp. salt
1/3 c. shortening
4 to 5 tbsp. water
1 1/2 c. drained cooked fruit, sugared to taste (prunes, apricots, apples, etc.)

Sift together flour and salt. Cut or rub in shortening. Add gradually enough water to hold pastry together. Press dough into a ball. Roll out on floured cloth or board to 1/8 inch thickness. Cut into rounds, about 5 inches in diameter. (An empty pound coffee can makes a good cutter.)

On half of each round, place 2 to 3 tablespoons fruit. Moisten edges with cold water, fold to make half circles and press edges together with fork. Place pies, two at a time, in frying basket. Fry in deep shortening, heated to 375 degrees F., 5 to 6 minutes or until light golden brown. Drain on absorbent paper. Sprinkle with powdered sugar while warm.
