TAMALES A LA ELSIE 
MEAT MIXTURE:

6 lbs. ground chuck
6 tbsp. cumin seed
1 c. chili powder
8 c. water
1 tbsp. Accent
4 tbsp. salt
3 tbsp. garlic powder

Brown meat, add other ingredients, including water. Simmer, covered until tender and flavors are well blended.

WRAPPERS: Scald 1 pound corn husks and wash well.

MASA MIX:

5 lbs. masa harina (20 c.)
1 pt. corn oil
4 tbsp. salt
2 tbsp. red pepper
Broth from meat
14 c. very hot water
