ZUCCHINI BREAD 
2 c. shredded raw zucchini, skin too
2 c. sugar
1 c. vegetable oil
3 eggs
1 tsp. vanilla
3 c. flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. ginger
1/2 tsp. cloves
1 c. chopped nuts
1 c. raisins
1/2 tsp. salt

Mix all ingredients in large bowl, pour into 2 (5 x 8) greased loaf pans and bake at 325 degrees for 1 hour or until done. Cool 20 minutes before removing from pan.

You could also make cookies, pour by teaspoon on cookie sheet and bake about 10 minutes. When cool brush with confectioners' sugar glaze.
