GREAT GREAT GRANDMA LATIMER'S
OATMEAL CAKE AND FROSTING
 
1 1/3 c. boiling water
1 c. quick oats
1/2 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 eggs, well beaten
1 1/3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt

Frosting:6 tbsp. butter, melted1/4 c, cream1 c. coconut, flaked1/2 c. brown sugar1/2 tsp. vanilla1/2 c. nuts, chopped:

Pour boiling water over oats and let stand while mixing other ingredients. Cream shortening and sugars; add to eggs; add to cooled oatmeal. Add to remaining batter ingredients; mix well. Bake in greased 9x13 inch pan for 30 minutes at 350 degrees. When cake is cool, mix frosting. Spread over cake. Place under broiler and watch closely. Serves 12 to 15.
