2 tbsp. vegetable oil
1 lg. onion, finely chopped
6 c. unsalted chicken broth
3 cloves garlic, minced
1/2 tsp. thyme leaves
1/4 tsp. pepper
1/4 c. chopped parsley
3 med. carrots, thinly sliced
1/2 c. alphabet macaroni
1 sm. zucchini, chopped
1 med. tomato, peeled, seeded, and chopped
3 c. diced, cooked chicken

Heat oil in soup pot over medium heat. Add onion and cook, stirring occasionally, until soft (about 10 minutes). Add broth, garlic, thyme, pepper, and parsley. Bring to a boil; cover and simmer for 15 minutes. Stir in carrots and macaroni; simmer, uncovered, until macaroni and carrots are tender, about 10 minutes. Stir in zucchini, tomato, and chicken; heat until steaming. Makes 4 servings.
