HOLIDAY VEGETABLE PUDDING | |
4 eggs, beaten 3 c. cream style corn 2 1/2 c. half & half or milk 1 can (16 oz.) green beans, drained 3 c. chopped tomatoes 1 c. chopped onion 2 med. green peppers, chopped 2 cans (4 oz. each) pimentos 2 c. sliced or chopped ripe olives 1 c. sliced mushrooms 1/2 tsp. Tabasco 1 1/2 tsp. salt 1/2 tsp. chili powder 1/2 tsp. paprika 1 1/2 c. yellow cornmeal 1 lb. bacon, fried crisp & crumbled Combine all ingredients as listed, except crumbled bacon and mix thoroughly. Pour into 5 quart casserole or pan. Bake at 325 degrees for 1 1/2 hours or until firm. Garnish with crumbled bacon. Serves 30. Can be refrigerated before or after baking; also freezes well. |
