APPLE CHIP CAKE | |
4 cups diced apples 2 1/2 cups sugar 3 cups all-purpose flour 2 tsp. baking soda 1 tsp. cinnamon 1 tsp. allspice 1/2 tsp. nutmeg 1/8 tsp. salt 3 eggs, slightly beaten 1 cup vegetable oil 2 tsp. vanilla extract 1 cup chopped pecans Mix together in a bowl diced apples and sugar. Let stand for 45 minutes. WHEN APPLE MIXTURE IS READY: Preheat oven to 350°F. In a large mixing bowl sift together: flour, baking soda, cinnamon, allspice, nutmeg and salt. Add to dry ingredients: eggs, vegetable oil, vanilla extract and pecans. Mix batter well. Note: Batter will be very thick like cookie dough. Stir in apple and sugar mixture. Turn in to tube pan. Bake at 350°F for 70 minutes or until toothpick comes out clean. Submitted by: JT Adams |
