APPLE NUT CAKE 
CAKE:

1 1/2 cups vegetable oil (Crisco)
2 cups white sugar
3 eggs
2 tsp. vanilla extract
3 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
4 apples, peeled, cored and sliced/cubed
1 (10 oz.) pkg. chopped pecans (about 2 cups)

Note: Do not use a stand mixer. For the apples, I use 2 red delicious, 1 granny smith and 1 gala.

In a large bowl combine oil, sugar, eggs and vanilla. Stir with a wooden spoon until well-mixed. Add flour, baking powder and salt. Mix well. Stir in apples and nuts.

Bake at 325°F for 1 hour 25 minutes.

GLAZE:

4 tbsp. (1/2 stick) butter
1/2 cup brown sugar
2 tbsp. milk

Combine all ingredients in a saucepan. Bring to a boil over medium heat, stirring often. Drizzle over cake.
