HOMEMADE EGG NOODLES 
1 egg
2 tbsp. water
About 1 c. flour
1/2 tsp. salt

Mix together egg, water, and salt and add enough flour to make a stiff batter. Roll it very thin on a floured board, then place the mixture on paper or a cloth to dry.

When dry, cut into thin strips and drop one by one into boiling water or chicken stock. Serve when tender. The noodles cook quickly, so add right before serving.
