GREEK MARINATED FISH | |
2 lbs. red snapper or sole fillets 1/3 c. olive oil Flour seasoned with salt & pepper 3 cloves garlic, minced 1/2 tsp. rosemary 1/2 c. white wine vinegar Dip fish in seasoned flour, coating both sides. Heat the oil in large frying pan and fry the fish, turning to brown on both sides. Remove to a hot platter. Drain off excess oil from pan; add garlic, rosemary and vinegar. Bring to a boil and let simmer a few minutes. Pour mixture over the fish, serve hot. |
