COCONUT CREAM PIE 
3 egg yolks
1/3 c. flour
Pinch salt
1 c. sugar
2 tbsp. butter
1 tsp. vanilla
2/3 c. coconut
1/2 c. milk
1 1/2 c. milk

Mix well beaten egg yolks, flour, salt and sugar in 1/2 cup milk. Scald 1 1/2 cups milk and add to mixture. Cook until thickened. Remove from heat and add butter, vanilla and coconut. Mix well and pour into baked pie shell.

MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
1/3 c. sugar
1/2 tsp. vanilla

Beat egg whites until they stand in peaks - add sugar, vanilla and cream of tartar. Cover pie and bake meringue 12-15 minutes or until brown.
