RICE AND CHEESE CASSEROLE | |
1/4 c. butter 1 c. chopped onion 4 c. cooked rice 2 c. sour cream 1 c. cottage cheese 1/2 tsp. salt 1/8 tsp. pepper 1 (7 oz.) can diced green chilies, drained 1 c. grated cheddar cheese 1 c. grated Jack cheese Preheat oven to 375 degrees. Grease 9 x 13 or 2 quart casserole. Saute onions in butter in skillet, remove from heat, stir in cooked rice, sour cream, cottage cheese, salt and pepper. Mix. Layer 1/2 rice mixture in baking dish, add 1/2 of chilies, sprinkle with 1/2 of cheese, repeat. Bake, uncovered 25 minutes or until bubbly hot. Sprinkle chopped parsley over top if desired or top with paprika. Makes 8 servings. |
