ZUCCHINI ITALIAN 
1 tbsp. olive oil
1/2 c. chopped onion
1 green pepper, chopped
2 cloves garlic, minced
1/2 lb. ground beef
1 c. zucchini, sliced thin
1 c. ripe tomatoes, sliced
1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. cayenne
Salt and pepper to taste
2 c. tomato sauce
3 tbsp. sugar
Grated Romano cheese

Saute onions, green pepper, and garlic in olive oil until soft. Stir in ground beef; cook until browned. Stir in remaining ingredients. Cook on low heat for 30 minutes or until zucchini is soft. Sprinkle top with grated cheese.
