CRISP CUCUMBER PICKLES 
1 qt. thinly sliced cucumbers
3/4 c. sliced onion
1/4 c. pickling salt
1 c. vinegar
1 c. sugar
1 tbsp. white mustard seed
1/2 tsp. turmeric

OPTIONAL:

1 c. green pepper, sliced
1 c. red pepper, sliced
1 c. diced celery

Place sliced cucumber in large bowl. Sprinkle with salt and cover with water for 2 to 3 hours, then drain. Combine remaining ingredients and heat to boiling. Add cucumbers and simmer 3 minutes. Can in hot sterilized jars.
