ROAST LOIN OF PORK 
1 loin of pork, whole or loin end, with backbone cut for easier carving
Thyme
Freshly ground pepper
Salt
Clove of garlic, (optional)

Preheat oven to 325 degrees. Rub the meat well with a mixture of thyme, pepper, and salt (and garlic, too, if you wish). Place on a roasting pan rack, flesh side up, and cook without basting for 24 minutes per pound.
