BROAST SQUASH 
1 zucchini
1 red pepper
1 yellow squash
4 cloves garlic
Olive oil
Fresh ground black pepper
Salt
Pine nuts

Cut first 4 ingredients into bite size pieces. Sprinkle them with oil, salt, pepper and pine nuts. Broast mixture at 500 degrees for 8 to 10 minutes until tender.

Variations include: minced onion and/or sliced sausage.
