PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon

Mix ingredients by hand. Bake on cookie sheet covered with wax paper. Bake at 350 degrees for 10 to 15 minutes. Fix cake on tea towel as soon as you take out of oven. Take paper off and roll in towel. Let cool.

ICING:

8 oz. cream cheese
8 oz. Cool Whip
1 c. sugar
1/2 tsp. vanilla
1 tbsp. butter

Mix icing ingredients in mixer. Unroll cake and spread with icing. Re-roll and slice.
