POTATO SALAD 
8-10 white potatoes
4-5 hard-boiled eggs
1 med. cucumber, chopped
5 stalks celery, chopped
2 tbsp. mayonnaise
1/2 tsp. yellow mustard
1 tsp. cider vinegar
Salt and pepper

Boil the potatoes with skins on in a large pot until they are tender. Let them cool and then peel the skins off. Cut the potatoes in chunks. Peel and chop the eggs. Put both the potatoes and egg into a large bowl. Add the cucumber, celery, mayonnaise, mustard and vinegar and fold them gently in with the potatoes and egg. Cool and serve.
