FROZEN LEMON TORTE 
3/4 c. vanilla wafer crumbs
3 eggs, separated
1 tbsp. grated lemon peel
1/4 c. lemon juice
1/4 c. sugar
1/8 tsp. salt
1/4 c. sugar
1 c. whipping cream, whipped

Line ice cube tray or loaf pan with half the vanilla wafer crumbs. In medium saucepan combine egg yolks, lemon peel, lemon juice, 1/4 cup sugar and salt. Mix thoroughly. Cook over medium heat until mixture just bubbles, stirring constantly. Cool. Beat egg whites until frothy. Add 1/4 cup sugar, beating until mixture forms stiff peaks. Fold in lemon mixture and whipped cream. Pour into pan, top with remaining crumbs. Freeze at least 4 hours.
