FAJITAS 
MARINADE:

1/2 c. Italian dressing
1/4 c. fresh lime juice
2 tbsp. light brown sugar
1/4 tsp. ground coriander
1 clove garlic, finely chopped
1/2 tsp. salt

Stir together. Mix marinade with steak strips; let set overnight.

1 lb. flank steak, cut into 2 x 1/4 x 1/4 inch strips
8 (8 inch) flour tortillas
2 tbsp. vegetable oil
1 med. size sweet green pepper, seeded and cut into 1/4 inch strips
1 lg. onion, halved and cut into 1/4 inch strips
2 med. tomatoes, halved, seeded and cut into thin wedges

Heat oil in large pan. Pat dry meat removed from marinade. Stir fry meat 3-4 minutes. Add pepper and onion; stir fry 3-5 minutes. Add tomatoes, stir fry 2 minutes.
