GRANDMOMMY RUTH'S SQUASH
CASSEROLE
 
This casserole makes a great holiday dish!

8 medium sized yellow squash
2 eggs
1 small onion, chopped
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup (1 stick) butter
1 cup crushed saltine crackers

Preheat oven at 350°F. Cut squash into pieces and boil until tender. Drain squash. Mix all ingredients together and pour into two separate pie pans greased with butter.

Bake at 350°F for 30 minutes. Remove from oven and cut into pie shaped pieces.
