SOUTHERN COAST FISH PIE | |
1 lb. cod fillets 1/2 lb. sweet corn 1 oz. butter 1 oz. plain flour 1/2 pt. milk 2 lbs. potatoes Salt and pepper 1 tsp. anchovy essence (opt.) 1 tbsp. chopped parsley Little grated cheese Simmer fish in slightly salted water until tender. Strain fish and flake. Cook potatoes, drain and mash well. Cook sweet corn until tender, drain well. Put flaked fish and sweet corn into a baking dish. Melt butter in pan. Slowly add flour, mixing constantly. |
