CURRIED CHICKEN SALAD | |
1 orange 1 med. banana 4 c. tossed mixed salad greens 2 c. cooked chicken, cubed 1/2 of an 8 oz. can (1/2 c.) jellied cranberry sauce, chilled and cut into 1/2 inch cubes 1/4 c. white raisins 1/4 c. salted peanuts 1/2 c. mayonnaise or salad dressing 1/2 of an 8 oz. carton (1/2 c.) orange yogurt 1/2 to 1 tsp. curry powder Section orange over bowl to catch juice. Slice banana diagonally and dip into reserved orange juice. Place salad greens in large salad bowl. Arrange orange sections, bananas, chicken, cranberry cubes, raisins, and peanuts on top of salad greens. Chill. To make dressing, combine mayonnaise, yogurt and curry. Chill. Pass dressing with salad. Makes 4 servings. This is a very pretty salad. |
