DEER OR BEEF SALAMI 
2 lbs. hamburg
2 tbsp. Tender Quick Salt
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. mustard seed
1 tsp. cracked black pepper
1/4 tsp. cayenne pepper
1/2 c. water

Mix thoroughly and divide into 2 loaves. Wrap in foil, refrigerate for 24 hours. Place in large pan of cold water and bring to a boil, time for 1 hour, leaving foil on. Remove and drain. Take off foil. Chill before slicing.
