6 baking potatoes Oil 1 lb. pkg. kielbasa sausage 8 oz. fresh mushrooms, sliced 2 tbsp. butter 2 bunches green onions, chopped Cheddar cheese, grated Wash and scrub potatoes well. Rub them well with oil and bake until done. While potatoes are baking, slice kielbasa and brown. Drain on paper towels and dice. Saute mushrooms in the butter. When potatoes are done, slice off the tops (lengthwise) and scoop out the pulp into a large mixing bowl. Mash potatoes, as you would normally adding butter, salt and pepper, and a small amount of milk or cream. Combine the kielbasa, mushrooms, and green onions with the potato mixture. Spoon back into potato shells. Top with the grated Cheddar cheese and bake until the cheese melts. NOTE: This makes a light main dish. For a side dish, substitute bacon for the kielbasa. |
