CHINESE CHICKEN SALAD 
3 whole chicken breasts
1/2 c. soy sauce
1/4 c. sugar

SALAD:

1/2 pkg. maifun rice sticks
1 head lettuce, shredded
4 green onions, chopped
1 tbsp. toasted sesame seeds or more
2 tbsp. sliced almonds or more

DRESSING:

3 tbsp. sugar
1 1/2 tsp. salt
3/4 tsp. pepper
1 tbsp. sesame oil
1/2 tsp. dry mustard
1 tsp. soy sauce
1/3 of a 6 oz. jar hoisin sauce
1/2 c. salad oil (reg. not sesame)
4 1/2 tbsp. rice vinegar

Marinate 3 whole chicken breast for 24 hours in soy sauce and sugar. Bake in marinate for 1 hour. Slice chicken. Deep fry rice sticks in oil and break up into pieces. Combine lettuce, onions, sesame seeds, almonds and rice sticks. Combine all ingredients for dressing in jar and mix well. Pour over salad before serving.
