CHINESE SHREDDED CHICKEN SALAD 
3 cooked chicken breasts
1 or 2 slices cooked thin sliced ham (optional)
2 oz. Mai Fun noodles
1 sm. head lettuce
2 tbsp. sweetened red ginger
2 stalks green onion
1 tbsp. toasted sesame seeds

Noodles-also called rice vermicelli or rice sticks MUST BE RICE.

Ginger-found in syrup at Chinese markets.

Sesame seeds-350 degrees for 5-7 minutes.

Finely hand shred the cooked chicken. Place in refrigerator. Cut all vegetables into fine strips (about matchstick in size). Toss all ingredients and dressing, except noodles, together just before serving. Noodles or rice sticks must be deep fried, cooled completely, and crushed to sprinkle on salad.

DRESSING:

4 tbsp. sugar
2 tsp. salt
1 tsp. white pepper
1/2 c. oil
2 tbsp. sesame oil
1/2 c. cider or white vinegar
4 tbsp. prepared Chinese mustard

Blend all ingredients together, mixing well.

Can use Coleman's hot mustard and add water until it pours.
