CHICKEN-RICE CASSEROLE | |
1-2 lb. chicken pieces, skin removed (boneless optional) 1 sm. onion, chopped 1 sm. bell pepper, chopped 1 tsp. salt 1/2 tsp. rosemary; optional 1 3/4 c. water 1 can cream of mushroom soup 4 tbsp. oil 1/2 tsp. pepper 1 c. rice In large skillet or casserole, brown the chicken in oil. Remove chicken to a plate. Add onion and pepper to skillet and saute until softened. Add rice and stir to coat with oil. Add remaining ingredients and simmer 10-15 minutes. Return chicken to skillet. Cover and simmer or bake 10-20 minutes until rice is done. |
